This sweet and summery salad is just what the doctor ordered to bring on spring!

Ingredients

Quinoa Salad

2 cups organic cooked quinoa
1 cup grated carrots
1 cup chopped cucumbers
1 cup chopped cherry tomatoes
3 chopped green onions
1 chopped avocado
1 cup of peas
Garnish with candied pecans and fresh blueberries.

Candied Pecans (*or walnuts)

2 cups of pecans
2 tbsp maple syrup
3 tbsp liquid coconut oil
Stir this together in a bowl
Add
2 tbsp coconut sugar
2 tsp cinnamon
1 dash of cayenne
1 pinch of salt
Stir together and lay out on a baking sheet lined with parchment paper. Bake at 350 for 10 minutes. Let cool.

Blueberry Hemp Dressing

2 tbsp PlanetHemp Hemp Seeds
1 cup PlanetHemp Hemp Seed Oil
½ cup olive oil or other oil
2 tbsp apple cider vinegar
2 tsp maple syrup
squeeze of ½ a lemon
1 tsp thyme
1/2 cup blueberries
salt and pepper to taste

Directions

Blend all salad dressing ingredients and adjust to taste. Drizzle over salad, serve and enjoy! Refrigerate for up to a week.
